Pumpkin Chili by Melanie Starita

I’m very excited to share one of our blog’s most popular & loved recipes! Melanie posted this pumpkin chili last year, over the past year, I’ve talked to my mom & my grandma about it on many occasions. I’ve made it myself a few times and can vouch for them….. it’s DELICIOUS! But to make it even better- it’s warm and can be thrown together in about 30 minutes. I can’t think of a better way to spend my evening than eating this delicious and hearty soup, especially as it starts to get colder (I hear the rumor on the street is that it’s supposed to snow on Wednesday in SLC). Anyways, enjoy- I know you will!

Ingredients
-1 lb ground turkey or lean ground beef (or leave it out altogether for a vegetarian option)
-2 Tbs olive oil
-1 c onion (yellow or white), chopped
-1/2 green bell pepper, chopped
-1/2 yellow bell pepper, chopped
-2 minced garlic cloves
-1 can corn
-2 cans red kidney beans, drained and rinsed
-1 can black beans, drained and rinsed
-2 cans (14.5 oz) diced tomatoes
-1 can (14.5 oz) pumpkin puree
-1 can (6 oz) diced green chiles
-2 Tbs chili powder
-1/2 Tbs cumin
-1/2 Tbs red pepper
-1/2 Tbs cayenne pepper
-Salt and pepper, to taste
-Water, to desired thickness of soup (I used two cans of water after pouring in the juices from the diced tomatoes)

Instructions
-Brown the ground turkey/beef in a pan
-In a separate pan, heat the oil and then sautee the onion, garlic, and chopped bell peppers for about 10 minutes
-After the turkey is browned, combine the turkey with the sauteed vegetables
-In a large pot, pour the diced tomatoes, kidney beans, black beans, corn, and pumpkin.
-Add the chili powder, cumin, and cayenne pepper
-Add the turkey and sauteed vegetables to the pot and mix all ingredients together
-Add water to the amount that make the chili the thickness you want
-Simmer chili in the pot on medium high heat for about 20 minutes

Notes
-Serve with a dollop of plain Greek yogurt and cheese if you please!
-You can reduce the amounts of red and cayenne pepper depending on how spicy you like your chili. The amount listed makes it moderately spicy.
